Hi! We are the founders of Tallinn’s Crustum Bakery and we are building our new project in the heart of the city - “La Boulangerie”.

It will be a classical French bakery of the highest level, where we will create a piece of our beloved Paris for you. We will carefully select the best ingredients and create true gastronomy masterpieces.

In the evening, the bakery will turn into a wine room with carefully matched wines and appetizers.


 

The Story: Who Are We?

We are Anna and Vasily - partners in business and in life. We used to work in the fields of law and IT, but one day we launched a bakery and it changed our life completely. This was 5 years ago. Since then, our bakery has grown exponentially, and we are happy to meet hundreds of guests from all over Tallinn every day. We greet them not only with the best bread and pastry, but also with the warmth of our hearts.
 


 

The Idea: What Will It Be?

Our new project, which is simply called “La Boulangerie” (“The Bakery” in French) is inspired by Paris, its taste, its magical atmosphere, and romance. As in Crustum, everything we bake can be bought to go, or enjoyed at the bakery. Once we fulfil our plans, you will be able to enjoy delicious naturally leavened bread and pastry, sandwiches, truly traditional French pies and quiches and of course some amazing desserts.



 

The Goals: How Will We Spend Money?

  1. Initial 16 500 euros: Our main goal is to launch a full bakery production on site. Our construction works are over, but we still need to purchase some equipment to make sure we can offer you enough of your favorite treats with consistent quality.
  2. Additional 4800 euros: Our next goal would be to dive deeper into French cuisine, equip a couple more working places to bake pies and quiches daily. Believe us, you have not tried anything like that in Tallinn before. 
  3. Additional 9450 euros: Then we will turn our focus towards desserts and build a separate confectionary studio. If you tried our éclairs and cakes at Crustum, imagine what we can do, once we pour additional resources into it and give it the attention it deserves. 
  4. Additional 4700 euros: It is hard to imagine Paris without the wine. We want to give you a place where you can not only enjoy the finest bread and pastry products, but also unwind in the evening with your friends with a glass of carefully selected wines and a set of matching appetizers.
  5. Additional 6350 euros: Our final goal is about something that we truly care, but have never had the chance to do at Crustum. We want to make a separate small production for gluten-free products that you can get fresh from the oven. We want to give this opportunity to everyone, even if some of us cannot tolerate gluten.
